Party Clinic: Words of wisdom - Recipe for success

Spring is one of Butter and Co Catering's favourite times of the year and director Karey Butterworth has some imaginative ways to welcome in the new season.

The spring months bring wonderfully fresh produce such as fine asparagus, earthy Jersey Royals, delicate fraises du bois (French strawberries) and tender spring lamb.

One unique way to make use of all of this fresh produce is to host an afternoon tea party for adults. Peter Rabbit or Alice in Wonderland with a refined twist are popular themes. Some food favourites include: creamy parsley soup sips with morels in shot glasses; honey-glazed Grasmere farm sausages with spring onion mash; wicker baskets lined with sorrel, spinach and rocket leaves and filled with baby carrots, mint, radishes, broccoli and spring onions, plus light blue bowls filled with quails eggs accompanied by celery salt. To finish, serve guests lemon and poppy seed fairy cakes with sugared flower petals or Queen of Hearts tarts with raspberry and basil cream.

Cocktails are equally important. Earl Grey martinis, rhubarb vodka ices, dark chocolate mint Grasshoppers or simply English Nyetimber sparkling wine with fresh strawberries are all superb choices.

For decoration use lots of fresh flowers and terracotta pots. Bright daffodils, colourful tulips, hyacinths, iris and freesia are all at their best this time of year, while strawberry topiaries are also fun as decorations.
