We like to be, under the sea, in an octopus's garden in the shade.

With a song in its heart, Diary is delighted to announce the opening of the long-awaited undersea restaurant at Hilton's Maldives Resort & Spa. Six metres below the Indian Ocean, diners can relax surrounded by views of coral and marine life including rays, sharks and reef fish.

Surely customer service etiquette dictates that if a particular fish looks more appetising than the one on your plate, a helpful waiter will dive out the nearest window and fetch it for you. And if in the process he happens to be eaten by a shark, then there's no need to leave a tip is there?
